More and more people are being diagnosed with having some sort of allergen, whether it is pollen or food. They are definitely on the rise.

For those preparing food, whether in a processing plant or a restaurant, it is so important to ensure that high allergen foods are prepared separately.
What are foods with high allergens?
According to EU regulations, there are 14 ‘high risk’ foods which are associated with allergens;
Gluten, Crustaceans, Eggs, Celery, Milk, Fish, Treenuts, Sulphites, Soya, Sesame, Peanuts, Mustard, Lupin & Molluscs.
What can be done to reduce the risk?
Now we certainly don’t want to teach anyone how to suck eggs, but one of the first things to do is draw your customers attention to the fact that you use high risk allergen foods.
This has already been going on for years. Any responsible restaurant owner understands the risks. Not only do they understand, but they want to protect their customers. Unfortunately, there have been stories of an irresponsible takeaway owner who didn’t regard his customers safety as high priority. He didn’t alert his customer to the fact that he was using a peanut oil and it resulted in a fatality.
